We are working on an OSX driver for Mac support. I don't have an a GA date for you today, however I assure you it's in the works...

pro allows you to install more than one. Second or third card (must be pro). First card (io extreme)

It seems like it would help in Final Cut like it does in other video apps... have you read our Autodesk report in the ioXtreme page?
As far as it working in Boot Camp... thats a good question. I will see what I can do to get the answer....
That's great. I hope to see some information on how it acts with After Effects and Motion 4.
Now all I need to understand is what exactly this card is doing to my workflow. Is this card basically a large sum of ram being added to my computer or is it video ram, adding support to my video card?

Absolutely! Both the ioXtreme and ioXtreme Pro will function properly with a Bootcamp'd Windows installation on Intel-based Macs. The same is also true with ioDrives.

I can verify that the original FusionIO 80GB SLC PCIe card works just fine on a Mac Pro Dual Quad Core Xeon 54xx (Jan 2008 release) when you boot into Windows 2008 R2. I would not expect the FusionIO extreme and extreme Pro to be any different in terms of compatibility. It's not a hardware issue, simply there are no Mac OS X kernel extensions available currently. I have been waiting for them for over 20 months since purchasing the initial FusionIO 80GB card as an early adopter.
I would buy one of these in a heartbeat for my MacPro if you had OS X drivers. I've been considering putting in an SSD drive to run as my boot disk but this would be a much better solution.
